Finca La Fany, located in Ahuachapan, is owned and operated by long-time Axil partner Rafael Da Silva Hoff, his wife Carmen Elena and his children.
Rafael’s family has been growing coffee in the region for over 100 years of the Apaneca-Ilamatepec Mountain Range in Ahuachapan. By processing the cherries in their own wet mill, the Silvas are able to meticulously monitor their coffee’s quality every step of the way.
This attention to detail has led to La Fany’s international recognition in several
‘Cup of Excellence’ Finals.
This year the Silvas have been experimenting to develop new processing techniques at the mill. This Pacamara lot is one of those experiments! The process is a ‘double anaerobic’, where coffee is fermented without oxygen. This gives the opportunity for longer fermentation to produce & change different acids and compounds within the coffee prior to drying.
