About The Coffee:This coffee was grown by Auricel Ramirez at the farm La Primavera. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects.
This lot was exposed to a 24 hour aerobic fermentation before being sealed in bags for 50 hours. The bags are flushed with Co2 for 50 and held at a temperature of 22 degrees. The cherries are then pulped, washed and dried on raised beds.
This microlot is 100% Caturra.
