I rarely go for beans from Latam, generally preferring African origin beans... but this little venture was rewarding. My batch was very "barn yard" with lots of fermented overtones to the fore. This will definitely not be for everyone. But I'm totally up for these sorts flavours and in the cup it is really good with lots of chocolate and hazelnut coming over the top of initial fruity notes. Importantly, the batch did substantially improved over time, with the sweet-spot (no pun intended) coming at about a week after opening. Really enjoyable!

This natural process has undergone an anaerobic fermentation where the cherries are stored in an oxygen free environment before starting the drying process. This extends the time of fermentation creating a more fruit & acidity driven profile.
