Grown by Herminson Cardenas at Finca El Filo, this coffee was carefully handpicked in order to select the ripest cherries. The coffee was then pulped and later fermented for 27 hours under water. Finally, the coffee was gently washed and placed on raised beds for 12 days until ideal moisture content was achieved.
Herminson was born and raised in Planadas, Tolima – where Finca El Filo is located. As a young man, he was very passionate about soccer and wanted to become a professional player. But, after finishing school, he decided to join his father Mauricio at the farm instead, and the quality of their coffee has improved dramatically ever since. In 2018, they were able to certify their farm as organic.
