Axil sourced this coffee from the West Valley of the Lourdes De Naranjo region of Costa Rica. It is produced by Jaime Cardena and processed at his micromill ‘Sin Limites’
Sin Limites only produces 200 bags of coffee per year, highly prized for it’s honey processing specialty. Recently Jaime has been participating in ‘Anaerobic’ fermentation experiments to bring out some new characteristics in his coffee.
This Anaerobic natural involves placing the cherries in a large vat and then removing the oxygen at the beginning of the process. With the removal of oxygen the fermentation can be extended beyond the typical 12-36 hours and enhance fruit characters and intensity in the cup.
