All coffee is sold as whole beans.
Santuario do Sul farm was created by Luiz Paulo Pereira; co founder of Carmo coffees, alongside his industry partners. The vision of this project farm aimed to shape the way Brazilian coffees were perceived, and create a new profile of Brazilian coffee via planting of exotic varietals gathered from various regions of the coffee world. The farm itself not only has traditional Brazilian varieties such as yellow Bourbon, but is also home to 30 other exotics varieties.
This lot is a Kenyan varietal - SL28, the first varietal of this kind that we’ve purchased out of Brazil. First harvested in 2018, it has shown resounding similarities to it’s Kenyan roots; with bright and clean acidity. It is the perfect candidate to demonstrate the ability of Luiz Paolo to push Brazilian coffee away from the stereotypical flavour profile that it precedes and further towards industry changing innovation.
Santuario do Sul farm is a project that was born from a goal of being ahead of market expectations. Cutting edge, differentiated cultivation practices and innovative processes allow Luiz to produce excellent quality which has been recognised by the industry through their unique flavour profiles on the specialty market. It is part of a wider vision known as the ‘Santuario Project’ which pools resources and bridges the collective knowledge of renowned coffee experts throughout multiple producer countries.
