About This Single Origin Colombian Pink Bourbon from Cafe Granja La Esperanza.
Before the birth of Cafe Granja La Esperanza, Blanca Ligia Correa and Juan Antonio Herrera began their work at Potosi farm. Juan Antonio decided to introduce three different varieties to the existing Typica once they purchased Potosi, and started a crop of Yellow Bourbon, Red Bourbon and Caturra. In 1945, Café Granja La Esperanza was born.
This lot is all Pink Bourbon; cultivated from hybridisation of Red & Yellow Bourbon from Potosi. It is one of the many trees planted within Potosi, including traditional and exotic varietals which have been thoughtfully cultivated over 50 years of ownership by the Herrera family.
These pink bourbon cherries are carefully and specifically selected to begin this unique process. They are placed in a special unsealed barrel to promote airflow and oxygen; this fermentation stage lasts 48 hours in whole cherry. Due to the cherry ripeness during picking and concentration of sugars within, the cup profile is rich and wildly intense in flavour. The environment during fermentation is monitored and adjusted every 6 hours to maintain stable temperatures not exceeding 30°C.
After the extended fermentation stages are complete, the cherries are placed in mechanical dryers for 48 hours and finished off via solar drying on patios for 9 days; in direct sunlight for 8-10 hours per day. The result is a spectacular cup, full of ripe & exotic tropical fruit flavours.
