About This Costa Rican Single Origin.
Producers Francisca Cabillo and Don Oscar Chacon own the famous Las Lajas Micromill. They are widely celebrated as among the first to process high-quality honeys and naturals in the central valley of Costa Rica.
The Las Lajas Micromill adopts organic practices – a testament to Don Oscar’s firm beliefs in preserving the environment, in conjunction with a conservative approach to water use. As third- generation coffee producers, the mill only processes coffee from surrounding family farms which plays a significant role in traceability. Francisca and Oscar are 100% hands on with the process and dictate all that goes on at their farms and mill.
This coffee has undergone the ‘Black Honey’ natural process. This Black honey process is different to Chacon’s white, yellow and red honey coffees. At the heart of it is a long, slow extended drying process that focuses the flavour in the coffee seed. With most of the mucilage still intact, it allows for maximum sugar concentration and development of flavour during the drying phases. This can be up to three weeks, and in contrast to standard naturals which are turned multiple times per day, the Black Honey process is only turned once. This gives the coffee a distinctively sweet and resonant flavour, abundant with ripe, red, winey fruit qualities.
