Ethiopia Adnan Natural Special Prep Filter - Single Origin.
This special coffee lot is designated as ‘special prep’ or what the producers call “Premium” in Ethiopia. This involves a limited number of small-holder farmers from which cherry is collected. These smallholders deliver cherry that is considered near ‘perfect’ with approximately 90% correctly coloured and only 10% overripe or semi-ripe. All of this collection is processed and stored separately from the other lots, with a small number of bags produced in this way each year. This methodology allows for a higher quality of coffee cherry to build the foundation of the lot.
Natural coffees in Ethiopia are first sorted for ripeness and quality before being rinsed clean. They are then spread on raised drying beds for around 30 days, where they are rotated constantly throughout the course of drying. Here they utilise shade nets to slow down drying time, allowing them to perform controlled and even drying, resulting in a consistent and elevated cup profile.
74148 is an heirloom Ethiopian landrace variety that was researched at the Jimma Agricultural Research Center in 1974. These are not hybrids, but original varieties selected from ‘mother trees’ and chosen for their positive attributes like production, quality, and disease resistance. This variety specifically is the product of a mother tree selected from the Metu Bishari selections made in the forest of the same name in the Illubabor Zone, selected for their resistance to Coffee Berry Disease.
