Ethiopia Tade GG Honey Single Origin Espresso.
Tade GG is a private farm owned by Tesfaye Bekele. He is so passionate about coffee farming that he has traveled extensively throughout Central and South America to visit coffee farms and observe different cultivation and processing methods.
The landscape at Tade GG is characterised by sharp and rugged hills, ridges, plateaus, valleys and flats creating a stunning setting. The region’s volcanic soil is nutrient rich, creating a deep red and brown topsoil.
Finding genuine specialty honey lots in Ethiopia is an extreme rarity. The extended supply chain that involves merging many smallholder lots makes it difficult to produce high quality honey-processed lots. Since Tesfaye can mill and export his coffee independently, he has the freedom to experiment with different methods.
At the farm’s washing station cherry is typically pulped with an Agard pulper, which leaves the mucilage intact. Coffee and its mucilage dry on raised beds where workers turn it regularly to ensure even drying while the sugars remaining on the cherry provide an adequate substrate for fermentation to occur.
