This delicious micro-lot comes from a small 4.5-hectare farm owned by Darwin Estaurdo Fabian Estrada. It is located near the village of Concepción Zacuapa in Santa Rosa.
Darwin is a fifth-generation coffee producer. In 1899 his ancestors moved to Santa Rosa de Lima, and established Finca El Chicon. Darwins father Bonicasio Fabian inherited a small piece of this farm called El Calagual, named after the abundant native trees in the area.
By tradition in the Eastern region, coffee is sold to intermediate buyers in ripe cherries. Instead, due to his small scale, Darwin is able to experiment with processes on the farm in a manageable way. It allows him to explore the quality potential of his farm and he rightly recognises this as a way to access much better prices in the specialty coffee market. Darwin is also employed at export company Prisma, managing their lab and utilises their resources to not only taste his own experiments but compare them to incredible lots across Guatemala.
On the farm there are African beds which have allowed Darwin to process naturals. He is also experimenting with a lot of new varieties on the farm – and currently has around 30 varieties in his nursery that he is planning to plant in the coming years.
This natural is full bodied, fruity and jam packed full of chocolate. It’s a small but delicious lot, and exceptional through espresso. Forest fruits, grape, berries and milk chocolate. We really couldn’t ask for more in an impeccably processed natural coffee.
