Honduras San Vicente Single Origin Filter.
This is a sweet honey-processed lot, produced by Jose Rolando Alfaro in the Santa Barbara region of Honduras. Jose’s coffee was selected as a microlot for its balance and overall complexity of flavour. This lot is the Paraneima variety, a selection of the Sarchimor variety made by the Instituto Hondureño del Café (IHCAFE)
Typical Paraneima characteristics include a silky body, light acidity with herbaceous undertones. The honey process adds complexity, body and sweetness; creating a cup which highlights both processing and varietal through consistent and well focused processing methodology.
This part of Honduras is renown, partly thanks to the work of people like Benjamin Paz and his company Beneficio San Vicente. The Paz brothers help producers process their cherry, educate with expertise, and realise the potential of their coffees. More importantly, San Vicente connects producers to roasters on the international market. The Santa Barbara mountain provides many environmental challenges to growing coffee but is home to some of the highest elevations in the country. The vast majority of Honduran Cup of Excellence winners have come from Santa Barbara since 2005.
