Peru Ceja De Selva Espresso - Single Origin

Coffee from La Ceja de Selva is grown on coffee farms that are located in the region of Cusco, Peru. The Cusco region is blessed with having diverse microclimates and biodiversity, firstly the intense cold Puna grasslands ecoregion, and also the well conserved area of Abra Malaga, a range of snow peaks famous for mountain bike adventures. This region finally extends to the hot and humid Amazon plain that then collides with the forests, Madre de Dios. All these ecosystems and biodiversity provides a wide range of microclimates and volcanic soils that distribute in different altitudinal tiers in the region where Ceja de Selva coffee grows. This climatic condition is what makes this region so magical and special for the production of specialty coffee

Here the coffee is planted and shaded amongst native trees and Guabas. The cherries are fully washed, and traditionally fermented for 30 hours, and dried on covered patios for 10-15 days.

This group of producers have great potential due to the altitude of their farms and the fertile volcanic soil found there. They also live in a zone with favourable climates whilst using traditional varietals that are adapted well to the environmental conditions. This as well as their focus on improving farm processes and practices allow them to produce coffee that has excellent potential in the cup.
