This coffee was produced by Julio Soscue Villada on his four-hectare farm near the small community of China Alta in Colombia’s Tolima state – a region known for its sweet, complex and high quality coffees. Julio and his family live at La Providencia farm in a house surrounded by coffee trees. They farm using traditional techniques, performing most of the work themselves.
This microlot was processed using the washed method at the farm’s small wet mill. Like many producers in the region, Julio progressively adds freshly picked cherries to the fermentation tank over a 48–72 hour period. Adding new cherries each day lowers the PH level. This, combined with the region’s cooler temperatures, extends the fermentation process, enhancing the coffee’s acidity and sweetness.
The result is a coffee that’s clean, balanced and very sweet in the cup. We especially love its winey acidity and syrupy body. We hope you enjoy!
