Yaye is a washing station owned by our long-time supply partners, Testi Coffee. It’s located in Sidama, Ethiopia on a site chosen by Testi for its advantageous natural conditions, including its staggeringly high elevation (2230 metres) and its proximity to the Gelana river for a source of fresh, clean water.
Some 500 independent farmers deliver their ripe coffee cherries to the washing station during the harvest period. These farmers typically grow coffee organically on small plots of land (averaging one hectare) alongside food crops of corn, grain and bananas. The area’s high elevation and cool temperatures cause the coffee cherries to ripen slowly, leading to denser beans and sweeter, more complex cup profiles.
This coffee was processed by the washing station team using the natural method – the coffee cherries were sun-dried in the fruit and turned regularly to ensure an even and consistent dry. All of this careful and expert work has resulted in a distinct and elegant coffee that is beautifully sweet and floral in the cup.
