This coffee was produced by Iris González with the help of her mother, Alicia. Iris is a fourth-generation coffee producer. Her father, Jose Mario, purchased Las Cortinas farm in 1991, recognising the potential in the land’s high elevation and its proximity to Lake Ayarza. Jose Mario tragically passed away just two years later, leaving a 17-year-old Iris and her mother to run the farm. Iris went on to study agriculture and the pair worked tirelessly on the farm, slowly gaining confidence in their agricultural skills and improving their infrastructure.

Today, Iris expertly grows and processes the family’s coffee on-site, which gives her oversight of the entire process. She is committed to farming as sustainably as possible, telling us, “We have a responsibility to take good care of the land.” This coffee was hand-picked and then wash-processed and dried on raised beds. Iris has found that the humidity caused by the lake slows down the drying process, resulting in more complex flavours in the cup. 

This is the second year in a row that we’ve offered coffee from Las Cortinas. In the cup, this lot has notes of raisin and orange with a milk chocolate finish. It’s absolutely delicious – we hope you enjoy!
