COFFEE PROFILE

A very unique and different expression of Brazilian coffee. The Starmaya variety paired with the Carmo de Minas terroir creates something very unusual. There is a wonderful blackberry acidity, juicy starfruit, a herbaceous note like black currant leaf and a malted vanilla finish.

SOURCING

Santuario Sul is a 120-hectare farm, 80 hectares of which are planted in coffee. It's owned by Luiz Paulo Dias Pereira, a fourth-generation coffee farmer and a cofounder of Carmo Coffees. Luiz Paulo is very curious about innovation through varieties and processing experiments, and he uses Santuario Sul as a kind of "test" farm for some of his ideas. There are over 30 varieties and cultivars grown there with a big focus on Ethiopian and African coffees.

Carmo de Minas, Minas Gerais

Carmo de Minas is located south of Minas Gerais, a region known for its unique conditions for producing coffee, with fertile soils, high-altitude areas and a predominance of sunlight. Starmaya is a first-generation (F1) hybrid. A cross between Marsellesa and a male-sterile Ethiopian or Sudanese landrace variety. It is the only F1 hybrid in the world propagated by seed rather than biotechnology. Typically, its parents are chosen to be genetically distant from one another to maximise vigour, increase yield and overall tolerance to environmental conditions without compromising cup quality.
