COFFEE PROFILE

This coffee is quite a ride. It starts with a crisp green apple and zingy lime flavours that quickly move to a richer red wine-like note.

SOURCING

The coffee is pre-selected and dried for 8 to 12 days. Then it's placed in tanks with water and left for 12 to 24 hours with 2% of the total coffee weight in salt. This addition eliminates some microorganisms and promotes bacteria development, producing lactic acid that dominates the fermentation. Subsequently, the cultured yeast is prepared, and the cherries are washed, pulped and deposited in hermetical plastic cans, releasing oxygen and producing CO2 for 48 to 72 hours. Finally, the coffee is removed and dried on African beds for 25 to 30 days as a Honey process.

ORIGIN

Pitalito, Colombia

Tabi means 'good' in the Guambiano (native tribe) dialect. It is a variety that can be aptly described as a cultivar as it's the result of many years of research done by Cenicafe, starting in the 1960s. It is a cross between Typica, Bourbon and the Timor Hybrid and it's resistant to coffee rust while still maintaining quality in the cup.
