COFFEE PROFILE

An exotic yet complete espresso with red currant notes, supported by tinned peach and fresh yellow nectarine. It has a classic and pleasant bergamot tea and floral aftertaste, adding texture to the cup profile.

SOURCING

In 2019 Hugh Kelly spent a week at Inmaculada Coffee Farms introducing controlled Anaerobic fermentation processing to give them more sway over the expression results of each coffee. 

They routinely implement it for nearly all their varieties and have refined their approach to these processes to showcase the flavours they enjoy the most.

Although Julian and his family produce exotic and rare varieties of coffee, their farm wasn’t always ideal for growing coffee. Julian regenerated the soil and the terroir with dedication and commitment through intentional farming practices. He recently converted to exclusive organic farming after seeing significant improvements in his coffee trees.
