This is a filter coffee full of all the high tone vibrant elements and heavier tones that add to the depth and complexity of the beverage. Juicy jazz apple acidity and crisp nectarine add lift with floral honey and ripe peach filling out the back end.

The farm is named ‘Canchapina’, which is a Popti word and refers to the many Guachipilin trees that grow on the plot and form a rare sight.

Coffee at Canchapina is processed in a very traditional way, most of the jobs are carried out by family members and there is no established wet mill. The coffee is transported using horses to the place where it is pulped. The cherries are pulped the same day of picking and fermentation is carried out in plastic tubs during a period of 24 to 32 hours. After fermentation, it is washed and taken to small patios where it takes 6-7 days for the drying process. Due to the lack of economic resources, they are currently working in an artisanal way but taking all the responsibilities for environmental care.
