SOURCING
The processing sites where cooperative members take their coffee to be processed and prepared for export are called factories. Githiru is the name of the factory and the wet mill. It was constructed in 1982 and currently serves a purpose to the coffee growers from the region. The coffee they produce is Washed processed, where the fully ripe cherries are pulped, fermented and washed to finally be dried slowly over 2-3 weeks until the moisture content reduces to 10-12%.

Githiru is a coffee farmer's cooperative and washing station consisting of 840 members in the Nyeri region. The average farm size is about a tenth of an acre, with smallholders generally managing half-acre plots. Each plot has an average of 250 coffee trees; SL28 and SL34 are the main varietals, with some Ruiru 11 and Batian. These coffees grow between 1350 to 1900 meters above sea level before being transported to the wet mills for processing.
