This Green Tip Geisha is the first commercial harvest from Iris Estate. It has peach and raspberries on the light side and confectionary melon and dried flowers on the darker one.

SOURCING

Lot Enigma is a process that was initially first produced exclusively for competition before becoming commercially available. The profile is a 250+ hour Carbonic Maceration ferment in specific temperature-controlled parameters. We are so excited about it because it showcases an array of flavours that collectively represent the broad spectrum of notes.

Iris Estate is a collaboration farm between Sasa Sestic, Jamison Savage and Elvin Siew. At the end of 2016, they purchased a vacant plot of land near Morgan Estate in Panama. The farm presents a unique opportunity for the trio to explore the possibilities of coffee, terroir and processing innovations. The land is stunning and sits on what seems to be an old dormant volcano. It feels like a natural amphitheatre or royal crown. In 2017 many exotic varieties, including Pacamara, Yellow Catuai, Sudan Rume, SL28 and Green Tip Geisha, were planted.

This is the first commercial offering, and it is an opportunity to foresee Iris Estate's promising future.
