COFFEE PROFILE

This month we bring you the highlight from Peru's micro-lot cupping table. An exciting coffee is so easy to drink with notes of candied citrus, lychee, pineapple and a subtle and elegant white tea finish.

SOURCING

Their processing uses traditional methods and relies heavily on the natural environment. Their small batch lots are dried in the sun at differing hours of sunlight to control the flavour profile and clarity of the beans. Due to the elevation of their wet mill, they ferment their coffee without water, bringing out more complex qualities like body and sweetness. Once fermentation is completed, the coffee is washed to remove mucilage and moved back and forth under sun exposure and cover until moisture reaches 11%.

Sol Radiante, Peru

Carlos Solórzano is a third-generation coffee producer at El Sol Radiante farm, meaning The Radiant Sun in Spanish. Along with his seven brothers, they cultivated 12,000 Geisha seedlings across their farms, ranging between 1920 and 2200 metres above sea level. He and his brothers have been working on this considerable effort for the last five years. In October 2021, the first harvest of Geisha took place, with Carlos and his family taking great care of this first batch of cherries.
