This coffee by producer Nestor Lasso originates from Colombia's Huila region, where coffees are prized for their sweetness, bright acidity, fruity and caramel characteristics.
SINGLE ORIGIN ESPRESSO COFFEE DESCRIPTION
Nestor Lasso lives with his family in the municipality of San Agustin, Huila.
He has been growing coffee on his farm El Diviso for the last 12 years and started planting Tabi and pink Bourbon 5 years ago. His farm produces approximately 8.5 tonne of coffee of which 60% of that is Tabi varietal.
At Nestor’s farm, coffee is picked following a very strict ripeness criteria, where only the best cherries are used for his microlots. Coffee is then de-pulped and placed in tanks for 36 hours where they undergo a dry fermentation. Later, these are quickly washed and passed onto raised beds where they reach ideal moisture content.
