Aldemar farms the Tabi variety at an altitude of 1750 metres on around a hectare of coffee planted, intermixed with bananas and beautiful hass avocados. Aldemar leaves his Tabi on the trees a bit longer than he would for Caturra to get optimal ripeness and sweetness. He depulps these perfectly ripe cherries the same day as picked, ferments for 36 hours for maximum sweetness, and then washes the coffee. After a pre-dry on raised shaded beds the coffee is brought up to his shade cloth covered drying patio, atop the house. Drying takes about 20 days total. When dry the coffee always kept in grainpro bags in Aldemar’s house to ensure humidity is stable at around 11%. Aldemar has trained at the local agricultural college in specialty coffee production and is a good cupper. He is a long time and highly motivated member of Los Guacharos, pretty much our favourite producer group in Southern Huila and a downright gentleman!
