Luis Alfredo (who goes by “Alfredo”) is a member of ASPROCAAR, a small association in the municipality of La Argentina, Huila, led by our friend and long time partner Willington Ultengo.
Alfredo, despite living in Saladoblanco (55km away from La Argentina) was introduced to ASROCAAR by his brother Floriberto, whose recommended the association as a way for Alfredo to find a good buyer, as Floriberto has found us for his own coffee.
Alfredo is a producer we describe in Colombia as “muy juicioso”. Literally translating as “very judicious”, this accolade is reserved for producers who are super diligent and focussed in their efforts, from judicious application of farm inputs and applications all the way through to next level attention to detail with process of fermentation and drying.
Alfredo’s 5 hectare farm El Mirador is around 1600 masl, and in addition to the 3,500 pink bourbon trees (occupying about a hectare), he also has about 1,200 caturra, and 15,000 variedad colombia trees.
This pink bourbon is a washed process. First, he starts the fermentation process by leaving the whole cherries intact for 30 hours in sealed drums. From there, he de-pulps the seeds, and leaves it for close to 80 hours in the same drums. He has raised beds, and his coffee usually dries in 15-20 days.
