We chose this coffee in particular because of the "Koji" method is the first time both Forest coffee have done this, and Wide Open Road has featured it on our menu. Cupping this coffee was an amazing experience due to its fruitiness and incredible distinct flavours.
Description:
We used proprietary method involving Aspergillus Oryzae, a fungus renowned for its ability to enhance flavor profiles. This fungus is carefully cultivated alongside steamed rice, dried, and subsequently ground to create an integral component for the coffee beans. Following this, the beans undergo anaerobic fermentation, distinguished by a distinctive white layer.
