The El Vergel Reserve and Bird Friendly Coffee Plantation is an organic farm in Guatemala from where our latest single origin is sourced. The farm is committed to sustainable growing and harvesting of the finest coffee for specialty roasters around the world. Netting and toxic pest control methods can be a big issue affecting native wildlife species, especially birds, in the South American coffee growing regions. As such, El Vergel only utilises native-animal friendly, organic pest control techniques in order to ensure minimal impact on the surrounding environment.
Coffee was introduced to the volcanic microregion over two hundred years ago. The temperate climate and low rainfall of roughly 1500 - 2000mm per year creates an ideal microclimatic condition that gives the coffee its unique flavours.
Coffee from El Vergel is Organic and Fairtrade Certified and is fully washed and dry milled at the FECCEG Mill. The FECCEG is a national co-op providing services and support for Guatemalan coffee farmers across the country, and utilising collective bargaining techniques to ensure farmers are well paid for their work.
V60 POUROVER BREW GUIDE
Recipe Starting Point (Pour Over):
17.5 g Dose
300 mL Water (94 Degrees C)
3:30 Time (50mL / 30 seconds + 30 sec development time)
Note: We have developed a filter profile for this coffee - meaning it is roasted a little lighter than would normally suit an espresso brew method. If you're using an espresso machine, high-pressure Aeropress, or prefer a darker roast for your percolator, we recommend our Single Origin Espresso Roast. However, we're more than happy to supply any of our coffees ground to any specifications - coffee is a personal journey, and we are excited to take that journey with you.
