Don Alejandro’s El Pozo farm, situated at 1,200 meters in the heart of Veracruz, is a testament to his dedication to traditional, sustainable farming.
This washed lot undergoes an 84-hour anaerobic fermentation of whole cherries, followed by an additional 25-hour fermentation in parchment. After washing, the coffee is dried slowly over 117 hours, culminating in a final 77 hours of mechanical drying.
The result is a clean, complex cup with bright citrus acidity, floral undertones, and a silky body, revealing the care and expertise Alejandro brings to every harvest.
