Harsu Sala washing station operates as a community project in Uraga, Guji — one of Ethiopia's most celebrated districts for washed coffee. Founded roughly fourteen years ago by Bisrat Melaku, it processes hand-picked cherry from smallholder farms across the surrounding highlands. Cherries are density-sorted, put through an extended underwater fermentation and dried slowly on raised beds, giving the cup real clarity: soft peach sweetness, a lemon-tart brightness and a creamy white chocolate finish that holds up beautifully in milk.
