At Riverdale Estate, our commitment to crafting exceptional coffee starts with the meticulous selection of cherries with a Brix measurement of 25 or higher.
After a thorough cleaning and washing using spring water, we embrace a distinctive approach by introducing a combination of red wine yeast and mixed fruit during the fermentation stage. This extended fermentation period, spanning 80 hours, allows us to achieve a captivating balance of complex acidity and delicate flavour profiles that make our coffee truly exceptional.
Once the fermentation process is complete, the cherries are carefully sun-dried on raised beds for an extensive period of 30 days. This unhurried drying process nurtures the beans, enabling them to develop their distinct and captivating characteristics.
