This lot is a joint effort between two Indonesian producers — Catur Coffee Company and Karana Global. The custom "Pichia & Luwak" yeast culture behind it was developed by Berlian Bio, Catur's microbial research arm, and the cherry is processed at Karana Global's site in Kintamani, Bali. Fermentation runs for 72 hours in sealed anaerobic tanks inoculated with that yeast blend, after which the cherry dries slowly in greenhouses over 28 days. The result is a tropical, juicy cup with a weighty body and a genuinely complex texture.
