Madakaripura is the project of Arief Rachman, a former barista competitor who turned to processing, determined to lift East Java beyond its commodity-grade reputation.
Now in its fifth harvest, the farm produced this special lot using Mossto: ripe cherries are washed in salt baths, sealed in bags with leftover cherry juice for 48 hours, then dried on raised beds for 29 days. The result is a vivid grape character with a lively orange finish and floral lift.
