About this coffee: The coffees grown on the farm are a testament to the dedication of Luiz Paulo and his partners. In addition to traditional Brazilian varieties such as Yellow Bourbon, the farm now has over 30 exotic coffee varieties. Starmaya is a high-yielding plant suited for medium altitudes, featuring notably high acidity in the cup. The selected cherries are transported to barrels, undergoing an anaerobic fermentation for 92 hours. Afterwards, the cherries are spread on raised beds and dried for 22-24 days to achieve optimal moisture levels. We tasted the sweetness of raisins, the fruity and slight tartness of berry jam, and the bittersweet taste of dark chocolate.
