Gihere Central Washing Station has been operating in Burundi's northern Ngozi province since 1984, taking in cherry from more than 1,600 smallholder producers farming between 1,650 and 1,950 masl.
At that altitude the Bourbon trees ripen slowly, and this natural lot is dried whole in the cherry on raised beds, concentrating the fruit into something closer to jam than juice. Roasted for filter, it drinks sweet and syrupy — blueberry and dried cranberry up front, cacao nibs underneath.
