About The Coffee:
This coffee was grown by Auricel Ramirez at the farm La Primavera. The coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove defects. The cherries are then fermented underwater for 30 hours before being pulped. The parchment is gently washed and dried in temperature-controlled conditions until it reaches an ideal moisture content. This microlot is 100% Castillo which is more productive than Caturra and resistant to coffee leaf rust. We chose this coffee for its vibrant profile with a harmonious blend of sweetness, citrusy brightness, subtle caramel undertones.
