About The Coffee: This coffee was grown by Luz Helena Salazar at the LaLeona farm. The cherries were subjected to a dry aerobic fermentation for 24 hours and then stored in Grainpro bags for 90 hours at a temperature below 22°C. After that, the coffee was pulped, gently washed, and left on raised beds until it reached the ideal moisture content. This micro-lot is 100% Pink Bourbon, a varietal whose origin is currently being researched. It is believed that the varietal resulted from a mutation at 2100m above sea level in San Adolfo, Huila. We selected this coffee for its harmonious balance of fruity sweetness, bright acidity, and subtle richness.
