About The Coffee:This coffee was grown by Jairo Arcila at the farm Santa Mónica. This lot was first aerobically fermented for 24 hours. Then, the whole cherries were placed inside Grainpro bags for 50 hours, maintaining a temperature below 22oC and adding CO2. Finally, the whole cherries were placed on raised beds at a temperature below 35oC until ideal moisture content was achieved.
This microlot is 100% Papayo. This varietal is a rare mutation that took place in Acevedo, Huila. Ripe cherries turn orange in colour and the shape is similar to a papaya. The cup profile is complex, with defined jasmine, sugar cane, and sweet chocolate notes.
