Los Cuarteles Micromill sits high in the Tarrazú highlands, in the micro-region of San Pablo de León Cortés.
Run by the Araya family, the mill draws cherries from a cluster of small high-elevation farms — El Dragón Junior, Carteles, Ojo de Agua, Don Chayo, Montes de Oro and Las Nubes — all sitting between 1,700 and 1,885 masl, where cool temperatures slow cherry maturation and build density. Everything at Los Cuarteles rests on careful lot separation, letting each variety express itself cleanly. The red honey process keeps a portion of the mucilage on the bean through drying, giving this espresso its layered sweetness and long, balanced finish.
