A short boat ride from Lake Kivu, Gishamwana Island holds more than 35,000 coffee trees alongside cows, goats and even an albino rabbit, all grown organically under far more shade than is typical for African coffee. Owned by Emmanuel Rwakagara, founder of the COOPAC cooperative, the island's isolation from other coffee farms has kept it largely free of common diseases and pests. Cherries are harvested, depulped, dry and wet fermented, washed, soaked and dried on raised beds, all on the island itself.
