Arsosala is a washing station established in 2015 that now works with roughly 1,200 smallholder farmers across the Urga woreda of Guji.
Cherry is picked ripe and depulped the same day, fermented overnight, washed clean and then laid out on raised beds, taking 8-15 days to dry in sunshine and up to 20 days under cloud. As is typical in Ethiopia, growers tend tiny plots alongside other crops and deliver cherry to the station for sorting, weighing and processing.
