
Gondo Washing Station sits on the slopes of the Aberdare range in Murang'a County, gathering cherry from hundreds of smallholders farming around 1,900 masl under the New Kiriti Farmers Cooperative Society.
Pickers deliver selectively handpicked ripe cherry the same day, where it is hand-sorted and density separated before pulping. A traditional Kenyan washed approach follows: 16-18 hours of dry fermentation, a full wash in fresh stream water, a soak to stabilise the parchment, then roughly two weeks of slow drying on raised beds.
