Gaitania sits in the Planadas region of Tolima, where volcanic soils and high mountain terrain provide outstanding conditions for specialty coffee. This lot comes from the Nasa Wesx Indigenous community, whose commitment to sustainable farming has seen some of their coffees achieve organic certification. Cherries are carefully hand sorted and depulped before a thorough wash, then dried slowly on raised beds to reach ideal moisture content.
