This honey-processed microlot comes from indigenous smallholder growers in Aponte, Nariño, members of La Cooperativa de Cafés Especiales de Nariño, whose farms of 0.5–1.5 hectares sit above 1,700 masl. Selectively picked cherries are pulped, given a 35-hour dry fermentation, then dried slowly on raised beds for around 11 days. The lot is 100% Castillo — a productive, leaf-rust-resistant variety developed by Colombia's Federación Nacional de Cafeteros — and Aponte's producers have spent four consecutive harvests refining their honey processing, which shows in the cup: juicy grapefruit and guava up front with stonefruit sweetness and a caramel finish.
