Altitude: 1700 MASL
Decaffeination starts with the green beans loaded into separate chambers so the process can be controlled closely. The coffee moves through a funnel into the pre-treatment stage, then a steam chamber that lifts the silver skin off the bean. The beans are then submerged in spring water until saturated, and passed to the extractors where eight hours of direct contact with sugar cane ethyl acetate dissolves the caffeine.
Once decaffeinated, the coffee is dried in a temperature controlled chamber back to its original moisture content, then funnelled back into its bags. The Descafecol team monitors each stage so traceability is maintained end to end.
