José Uribe Lasso founded El Diviso in 1997 in the Normandia district, about half an hour northwest of Bruselas in Huila, and runs it with his sons Jonathan, Nestor and Adrian. It's a familiar Colombian arc — the next generation refining what came before and pushing it somewhere new.

Ombligon is a rare Arabica mutation of Ethiopian landrace stock, nicknamed "belly button" for the shape of its cherry and prized for how expressive it cups. Processing is long and tightly managed: ripe cherry is hand-selected, floated and sanitised, oxidised for 24 hours to build sweetness, then fermented anaerobically for 200 hours in a temperature-controlled bioreactor with recirculation and added microorganisms.

A second oxidation follows, then rapid quenching and a hot-water treatment to knock back microbial load before drying. Drying happens in a sealed steel dehumidifier — a fast initial phase to lock in volatiles, a short rest, then a slow finish. It's what keeps the clarity and stability of everything the ferment built.

Roasted for filter it's clean and layered: cherry and raspberry up front, chocolate and dried fruit sitting underneath.
