Colombia Juan Martin Washed Single Origin Espresso.
Finca Juan Martin is an innovative and experimental farm owned and operated by Banexport. The goals of this project are to cultivate, harvest, and process different varieties in order to develop appropriate practices for each step. Beyond this, Juan Martin serves as a resource and example for coffee producers that sell and export their coffees through Banexport.
Coffees here are cultivated, harvested, and processed while adhering to the highest standards of quality, organisation and control depending on the conditions, specific needs required by each variety; and desired cup characteristics.
Colombia is best-known for its washed coffees. While the processing details might vary slightly, generally the coffee is picked ripe and depulped the same day, then given an open-air fermentation in tanks or buckets for anywhere between 12–36 hours. The coffee is washed clean of its mucilage before being dried either on patios, in parabolic dryers, solar driers, or mechanically.
This lot is made up of Pink Bourbon; cultivated from hybridisation of Red and Yellow Bourbon. A carefully isolated lot can preserve the unique colour and character of this variety, although it is very difficult to produce with consistency.
