This lot is the work of around 900 smallholders in Bensa, Sidama, who farm tiny plots—typically under two hectares—using traditional, low-input methods, with coffee grown alongside food crops under native shade trees. Cherry is delivered fresh each day to the Ayla washing station, operated by Testi Specialty Coffee, where growers are paid a premium above the government rate with further payments after sale. Processing is tightly controlled: cherries are hand-sorted and density-graded by flotation, pulped within hours, fermented 36–48 hours, washed, channel-graded and soaked again in clean water, then dried on raised beds under shade for 5–7 days with frequent turning.
