Around 900 smallholders in the Bensa woreda contribute cherry to this lot, most of them working plots under two hectares with traditional low-input methods and coffee interplanted with food crops beneath native shade. Cherry goes to the Ayla washing station the same day it is picked, and Testi pays a premium over the government rate with a further payment distributed after the lot sells, so cup quality flows straight back to the grower. At the station the cherry is hand sorted and float graded before pulping, then fermented under water for 36 to 48 hours, washed, channel graded and given a second clean-water soak. Drying runs five to seven days on shaded raised beds with frequent turning and hand sorting. Taken a touch further for espresso, the honey sweetness thickens up and the lemon acidity settles into stonefruit.
