This lot comes from twenty growers in the Chericho kebele of Arbegona, selected through Testi Specialty Coffee's Premium Cherry Selection program — a scheme that pays a premium for consistently ripe, well-managed cherry. Intake at Yaye washing station is deliberately strict, with extra sorting and floatation used to level out quality before anything is processed.
Drying is a controlled natural: cherry goes onto raised beds in shallow 5cm layers and is turned often so fermentation and moisture loss stay even, running roughly 30 days down to 12% moisture. Roasted for espresso it lands sweet and fruit-forward — blueberry and cherry over violet florals with a lemony lift.
